I received the great news a few weeks ago that I’ve officially been published!!!! All the hard work I put into my masters dissertation project was definitely worth it! I’ve kind of got in a rut of eating very similar things for dinner, particular after a long day at work! But I’m trying to make time on the weekends to be a bit more adventurous 😜 It’s important to mix it up a bit! This is delicious Marak kubbeh adom - a Jewish-Iraqi stew of beetroots, tomato and a load of spices, with meat filled semolina dumplings (I used turkey mince). Sadly I didn’t have my beautiful garden in Cambridge to use for the backdrop of this photo...but my pretty nice kitchen in London! What exciting recipes have you tried making recently?
This weekend I baked a load of rhubarb with some orange zest, orange juice and a sprinkle of sweetness...enough to top my porridge for a week! Based my toppings on a good old fashioned British rhubarb crumble 😀 so topped this off with vanilla yoghurt ‘custard’ (natural yoghurt with vanilla pod seeds), a sprinkle of cinnamon, & some toasted crushed cashews for added crunch! Vanilla pods are pretty expensive so alternately you could add a drop of vanilla extract or essence to natural yogurt for a similar affect 😜 ... FOR THE BAKED RHUBARB (makes a lot!): 1️⃣ 500g rhubarb cut into 1inch pieces 2️⃣ Juice and grated rind of one orange 3️⃣ 2tsp of naturally derived sweetener or 4tsp honey ▶️▶️▶️Mix all the previously mentioned ingredients together and lay out in one layer on a baking tray lined with baking parchment. Bake at 200 degrees C for 15mins covered in foil and then for a further 10mins without foil...done! #LoveYourOats
It seems like more and more people I know are becoming vegetarian and vegan ...From an animal welfare and in particular for me from an environmental point of view I think it’s great! To be honest it is not a lifestyle choice I will probably ever choose, however I am definitely making an effort to reduce the amount of meat and animal products I eat :) If everyone can make a little change in what they eat weekly we can make a huge difference! Whipped up some fajita spiced quorn with basmati & wild rice, caramelised onion, and some extra cute mini peppers!
