Creamy avocado basil tuna pasta and courgetti

I tried avocado a long time ago and thought it was …well disgusting but evidently I was too young to appreciate the rich and creamy texture it has! And to be honest until I only conjured up the courage to try tuna on holiday last year in Italy as I have been put off since primary school where they had a huge tub of mushed tuna mayo… but now I love tuna! Just shows our tastes are effected so much by what we experience when we are young and that our tastes do change so even if you think you don’t like something try it again… you might be missing out on something extra yummy.

I LOVE CREAMY PASTA SAUCES and this recipe with avocado is a way of achieving one containing a good helping of healthy fats and of course it’s delicious too 🙂

(Serves 1)

For the sauce:

  • ½ an Avocado (c.60g)
  • ½ crushed Garlic clove
  • A handful of Basil
  • 1tsp. Chilli flakes
  • 2tbsp. Natural yoghurt
  • ½ tsp. Lemon rind
  • 1tsp Lemon juice
  • 2tbsp. Water
  • Salt & Pepper
  • To serve with:
  • 60g whole wheat pasta
  • 1 small Courgette sprialised/Julien pealed/sliced very thinly
  • Handful of Cherry tomatoes cut in half                                                                     
  1. Blend all the ingredients for the sauce together except for the tuna

  1. Cook the pasta until al dente and then add the courgette to the pan, and cook for a further 2 minutes

  1. Mix the sauce with the tuna and stir into the warm pasta and courgetti
  2. Serve with the cherry tomatoes

If you’re not a fan of tuna substitute it for shredded chicken (perfect if you have some leftovers in the fridge) or salmon!
